Toffee Squares

This is another recipe passed on to me from my Aunt, For as long as
I could remember, when we were all still together, we would spend Christmas Day at my Aunt's House. Their house was decorated so nice with the Manger scene on the lawn and speakers playing music from the attic windows that you could hear as soon as you pulled up in front of their house. My aunt was great at baking, her deserts were just mouthwatering, and everything was arranged on plates just perfectly.
I used to wonder if she ever burned anything, because her pastries were just perfect. She would always have boxes made up for all of us as we went home filled with her Christmas cookies. One of these were Toffee Squares. She gave me the recipe eventually but she did something to make hers very light in taste, or maybe that was just her secret touch because all her cookies were very light in texture & taste, you could just keep eating them one after another. I never acquired her secret but these are still a tradition in my family to make each Christmas.


 

Dough:

1/2 lb Butter
1 Egg Yolk
1 Cup Brown Sugar
1 Teaspoon Vanilla
2 cups Sifted Flour

1 8oz Hershey Chocolate Bar (for topping)
Finely chopped pecans or walnuts to sprinkle over chocolate

Preheat oven at 350 Degrees

Cream butter with brown sugar, add egg yolk & vanilla, add flour, mix well.
Spread the dough on a greased cookie sheet. Spread the dough evenly going slightly up the edges.
Bake at 350 degrees for 20 to 25 minutes. Do Not Over Bake!

Mean while melt candy bar in double boiler (nowadays you can melt in your microwave) Keep stirring until smooth.

Spread the chocolate over the dough as soon as it comes out of the oven.
Sprinkle with finely chopped pecans or walnuts.
When cool, cut into small squares. Use a Sharp knife dipped in cold water when slicing them. Store in a tightly sealed container in a cool dry space.

Alternative for using candy bar, Take semi-sweet chocolate chips and pour over
the dough as soon as it comes out of the oven, spread the chocolate as it melts gently with a spatula. Sprinkle with nuts.
