Potato Pancakes

My Mother didn't cook much but she loved to make Potato Pancakes.
People on our block used to place orders for them & my father
or myself would have to deliver them. she never accepted a dime
for them, she was just pleased to know others enjoyed them. I
have never yet found them made the same way as my mother
made hers in any restaurant and I'm grateful that I paid
attention to how she did hers so that I can make them
for my family. This recipe does require a little bit of work
and makes about 5 dozen.



 

Batter

8 large potato's (any kind)
2 egg
flour
2 - 4 cups milk
Grater
Cooking Oil or Crisco Solid
large frying pan

For the first time you can cut the ingredients in half & make a dozen or so
to see how you like them. This is a recipe that you have to judge more by
the eye then exact ingredients.


Peel your potato's & place in a pot filled with cold water, this will keep
them from turning black while your grating.
get a large container, I use a square one & start grating those potato's.
You want to use the side with the smallest holes. This is the hardest part
of the recipe. Every so often pour your grated potato's into a large mixing bowl
that you will make your batter in. Once your done with the grating, add the
2 eggs to the mixture & milk. start with 2 cups of milk, you want it to resemble
a loose batter, so add more milk as needed. now start adding your flour.
add enough that the batter is thick but loose enough to pour off a spoon.

In a large frying pan heat enough oil to cover half of the dough you will be dropping in. Do not pour in batter till oil is well heated. Using a large spoon, start adding
your pancakes, just like making regular pancakes. as soon as you see the edges browning, turn over to fry other side. They will have a crispy texture. When they are a nice dark golden brown take out & place on a plate covered with paper towels to absorb the oil. Salt Well. Keep making your pancakes till you make as many as you want. Serve hot with various toppings.

The batter will keep for a few days in the refrigerator. Just skim off the top layer that will form & mix dough well before using again. If the dough is too thick just add a little bit of milk to it.

Toppings for Pancakes
sour cream, cottage cheese, applesauce, Karo Syrup,

Apple Pancakes
Peel & cut up apples into small cubes, add to batter. Very Good.
