Kolacki
If you ever have gone to a Polish
Wedding you most likely saw
Kolacki's on the Desert Plates. They consist of a a very light
cookie crust that's either round in shape or squares that have
2 corners brought together in the center & pinched together.
They are usually topped with or filled with fruit filling's
such as cheese, cherry, apricot & prune, and dusted with
Powdered Sugar. There are a variety of ways of making these
including the ones made with the "Icecream Dough". The ones
made with the icecream dough are a lot richer in taste but you
do need to work fast & keep your dough cold at all times. My
Aunt always used that dough and they were mouth watering, so
very light in texture & taste. The recipe below is from my
best friends mother & I've used this same recipe for years,
these are better known as Cream Cheese Kolacki.

Ingredients:
2 sticks Butter or Margarine
1 large Cream Cheese
2 cups Flour
1 cup powdered Sugar
2 teaspoons Baking Powder

Fruit Filling ( canned fruit filling in the baking section at
your grocery store)
Sifter or Shaker to sprinkle Powdered Sugar over baked
kolacki's
Circular Cookie Cutter or empty plastic cup to cut your
circles.

Wax Paper
Containers for storing them
Soften your cream cheese & butter (this can be done in the
microwave using defrost setting) or let sit out for a few
hours till soft. Mix all ingredients well. Put your dough in
the refrigerator & let chill till firm. or you can form the
dough into rolls that are 2" in diameter & wrap in wax paper,
chill until firm. Use what works best for you. If you do the
rolls method you will just slice your circles. The first
method requires rolling out on a floured surface and using a
circular shape to cut your circles. If you do roll out your
dough, make sure your surface is well floured & dust the top
of the dough with flour too. Cover with wax paper & roll out
your dough. Your dough should be about 1/4 in thick when
rolled out.Grease or spray
your cookie sheets, Place circles in rows of 4 across, press
down gently in the center of each circle with your finger to
make indention for your filling.
Open your cans of fillings and place a small amount in the
indentions you made.
Preheat oven to 350 degrees
Bake for 10 minutes, Watch them carefully, they will burn
fast, you do not want the edges to brown.
When done baking remove from pans & let cool.
Store in tightly sealed containers, putting sheets of wax
paper between layers (cut to size needed) store in cool place
till ready to serve.
Sprinkle generously with powdered sugar right before serving.
***Great to give as gifts.
***Dough can be made ahead of time & frozen till a day before
baking.
